Cauliflower and Quinoa Tabouleh

A simple and super healthy side dish for meat or fish… Can be eaten hot or cold.
Tabouleh

2 cups of cauliflower (processed in a blender to achieve a couscous like texture)
1 cup of cooked quinoa
2 tbsp olive oil
1 tbsp lemon juice
1 large bunch of parsley (finely chopped)
1 bunch of mint leaves (finely chopped)
Salt and Pepper
1. Mix the cauliflower and quinoa, season and add the olive oil and lemon juice. If you want to warm up just gently heat in a frying pan.
2. Add the herbs, mix together and serve.
