Sardines with chickpeas and poached egg/Conserva de Sardinhas com Grão e Ovo Escalfado


Portuguese fast food. Lunch for one with your favourite tin of sardines (we used sardines in tomato sauce), some chickpeas and a poached egg. This is literally quicker than ordering a pizza, much healthier and much tastier (than your average pizza)…

1 tin of sardines in tomato sauce
1 jar of cooked chick peas (if you can’t cook your own)
1 free range egg
Small bunch of coriander
Olive oil
Fleur du sel
White wine vinagre

  1. Poach the egg in simmering water mixed with some white wine vinagre (swirling the water to make a whirlpool before dropping the egg helps the shape).
  2. Plate all the ingredients to your liking, sprinkle some chopped coriander, drizzle with olive oil and season with freshly ground pepper and a little fleur du sel. That’s it!
